WIP: start updating for lstchain-v096 update

• ctapipe_io_mchdf5 won't be any longer working (ctapipe=0.12 has evolved a lot). We should start using the simtel --> hdf5 conversion provided by ctapipe.
  • This implies changing the whole simtel2hdf5 submodule
