Use multiple CoreNLP servers for our testsuite

Fixes #530 (closed).

This MR adds support for spawning multiple coreNLP servers during our tests, following the (test) settings of our .toml file.

I have also extended the highlighting API tests to showcase support for multiple languages (like FR).
